
Fish is good and it’s good for you. My Daddy used to say that fish was “brain food” and if you ate it, you got smarter. But smarter or not, I have always loved eating fish. Unfortunately, I like eating fried fish. When we go to the beach it’s always a “Fried Seafood Platter”, maybe good for the brain, but not so much for the arteries.
I had seen a recipe recently for Broiled Heavenly Halibut, which would be healthy and looked good, but the fish monger at Kroger’s was out of halibut. Then I saw a piece of cod that looked good, about 2-inches thick, and a pound and a half. I felt sure I could substitute the cod for the halibut, and it would be good. I did and it was – good that is.
Cod is usually the fish commonly used in Fish’n Chips. It’s a very mild fish and needs to be either fried or have a good sauce. The sauce/topping I used worked very well. The Heavenly Cod was just that – heavenly.
Here’s how.
The halibut recipe called for broiling, but since this piece of cod was fairly thick, I decided to bake it first to make sure that it was done. Medium rare fish is not among my favorites.
So, I rubbed a little butter on top of the cod, sprinkled it with salt and a bit of garlic powder and popped it into a 350 oven for about 20 minutes, until it began to flake easily. I removed the fish from the oven, smothered it with the sauce, put it under the broiler until it began to turn golden on top and removed. It was really good. The sauce below made it all happen
Heavenly Cod and Sauce
A nice slab of fresh cod
1/4 cup grated Parmesan cheese
2 tablespoons softened butter
1 1/2 tablespoon mayonnaise
1 tablespoon lemon juice
1 tablespoon chopped green onion
1/8 teaspoon salt
1/8 teaspoon garlic powder
2 dashes tabasco sauce
