
Ground Pork is one of the best buys in the grocery store. It generally sells a for about $3.99 pound and it’s 100% edible – no waste whatsoever. And because it’s been ground, there is enough fat added to keep the pork moist and flavorful, unlike many dry and flavorless pork chops and loins.
But when I’m planning out my meals, I often forget about it.
Last week, I was searching for an alternative to chicken and beef and saw the little packs of ground pork, tucked away in the meat counter. I bought a 1-pound package, wrestled with a few recipes and then decided on a new approach and made some delicious Ground Pork Patties.
Here’s how.
In a large bowl, mix 1 pound of ground pork with a dozen crushed saltines, 1 T dried onion flakes, 1 t garlic powder, 1 egg (lightly beaten), 1/4 C milk, and salt and pepper to taste. Let the mixture rest a bit so the saltines can do their thing, then form 4 or 5 patties and fry in a skillet with a bit of vegetable oil until nice and brown on each side – maybe 12- or 14-minutes total. They are good plain, or on a bun slathered with Dijon mustard and a stack of pickles. Easy, tasty, and economical.

1 pound ground pork
1 T dried onion flakes
12 saltine crackers, crumbled
1/4 cup milk
1 t garlic powder
1 egg, lightly beaten
S & P to taste
Vegetable oil for frying (cover the bottom of the pan)
