
I enjoy ground pork – not ground sausage, just plain old pork that’s been chopped up. You can use it in lots of recipes, but I enjoy it in patties – like burgers. I bought a pound recently. It’s cheap, like four of five bucks and I figured I would decide later how to cook it.
I decided on pork patties, but that night when I looked for the saltines which I use as a filler, we were out. Then I saw a can of French-Fried Onions in the cupboard, the kind you sprinkle on a green bean casserole. I decided to use that as the filler and my ground pork patties were unbelievably good. I generally put a few diced onions in my patties, but with the French-Fried Onions, that wasn’t necessary. I used 1 pound of ground pork, 1 cup of crushed French-Fried Onions, 1 egg and salt and pepper. I formed three nice patties – enough for 3 servings – and fried the patties in a bit of olive oil till they were done. Really, really rich and juicy and I had the extra patty on a sandwich the next day and that was even better.
