
I hit on a good recipe recently; one that is simple, delicious and reasonably healthy. The recipe called for Garlic Butter Chicken Bites which I converted into Garlic Butter Chicken over Stuffing. This is a company-worthy dish that comes together quickly.
The recipe called for bites, but I didn’t want bites. I found a good buy on 2-lbs. thin cut chicken breasts and cut them into smaller pieces – about the size of a biscuit. How you cut them is not important. It’s how they are cooked.
Drizzle the pieces with olive oil and season with garlic powder and kosher salt. Add them– a few at a time – to a hot skillet with enough olive oil to cover the bottom. Cook quickly until golden brown on each side, but don’t overcook. Three or four minutes a side is plenty. I made a couple batches but if you’re cooking for two, one batch works. Divide ingredients by half. While the chicken cooks, heat 3 C water and 1 stick of butter until boiling, then add 2 packages of Hawaiian Seasoned Bread Dressing (use 1 box for a single batch). Remove from the heat, cover and let rest.
Add ¼ stick butter back to the skillet for each batch. Put the browned chicken pieces back into the skillet and toss until well coated. Remove the dressing from the pot and spread on the bottom of a 10 x 13 pan or casserole dish.
Layer the chicken on top and pour the drippings over the chicken and stuffing. Pop in a 350 oven for about 10 minutes and serve immediately. It’s rich and delicious. You’ll like it.
Garlic Butter Chicken with Stuffing
2 lb. thin cut chicken breasts
2 T garlic powder
2 T olive oil, divided
1 1/2 stick butter cup
2 Boxes Seasoned Hawaiian Bread stuffing (or chicken flavored stuffing)
