
You had to have been from the Deep South to have even once heard of Cracker Salad. It’s a true Southern delicacy often enjoyed at Church Picnics, Funerals, Weddings and Potluck gatherings. I remember it as being one of the first-to-go side dishes at Family Reunions.
This is an effortless dish that combines the sweetness of fresh tomatoes with the crunchy, salty goodness of Saltines. A good way to use up some of those extra tomatoes when the family garden begins to produce.
Here’s how.
Chop a big, plump, ripe tomato (or two) with a sharp knife into small cubes. Add to the bowl of tomatoes a crushed sleeve of Saltine Crackers. Nabisco is best. Next, add a cup and a half of Mayonnaise (Duke’s works), 2 crumbled hard-boiled eggs, and 2 small, green onions, finely diced. Add a little salt and pepper and that’s it.
Serve immediately, or if you are making this well in advance of an occasion, wait until it’s dinner time to add and mix the crackers
Northerners will find this to be a strange combination, but once you taste Cracker Salad, you might start singing, “I wish I was in the land of cotton.”
Deep South Cracker Salad
1 or 2 fresh tomatoes, diced
1 sleeve crushed Saltines
1 ½ C Mayonnaise
2 Finely chopped green onions
2 crumbled hard-boiled eggs
S & P to taste
