
It’s October. The nights are getting chillier. After a long, hot summer, it’s time for some chili. Here is a recipe for a Chili Cheese Casserole that is perhaps the ultimate in comfort food. It comes together in about a half hour and will fill the hungriest belly. Kids, especially, love it.
Here’s how.
Begin by putting 2 pounds of Tater Tots in the oven and cook according to instructions until done. While the Tots are cooking, brown one-pound of lean ground beef (at least 85/15), drain off any fat and add a package of Chili-O seasoning,1 can light red kidney beans, one can of diced tomatoes and salt and pepper. Simmer for 10 or 15 minutes.
Put half the cooked Tater Tots in the bottom of a lightly greased baking dish, add salt and sprinkle 1C grated, sharp cheddar cheese over the potatoes. Add 5 cups of your chili. Add the rest of the Tater Tots and another cup of the cheese. Bake for 15 minutes in a 375 oven and dig in!
5 C chili
(1 lb. Ground beef, 1 pkg. chili seasoning, 1 can light red kidney beans, 1 can diced tomatoes)
2 C grated sharp cheddar cheese
1 2-pound package frozen Tater Tots
