
I gained 3 pounds on our short vacation to Lancaster County, but it could have been worse. I ate everything I sight. I have found, though, that if I put my mind and recipes on it, I can lose those quickly earned pounds, but it involves chicken. Lots of chicken mixed, in with fish.
To help jump start my weight loss, I went for chicken patties and caramelized onions. The onions did the trick – brought the normally tasteless patties to life and I really enjoyed the dish.
Here’s how.
Mix a pound of ground chicken with 1 T, mayo, 1 T Dijon, 1 T Worcestershire sauce, 1 t minced garlic and salt and pepper to taste. Mix well with your hands (yuck!) and form 4 patties, then set aside.
I cooked the caramelized onions first. Slice 2 sweet onions and fry them in 2 t olive oil over medium high heat. When they are tender, cut back the heat to low and cook an additional 30 minutes. Remove the onions and fry the chicken patties in another 2 T olive oil until golden brown on each side, about 10 or 12 minutes total. Cover the patties with the caramelized onions and cook on low for another 6 or 7 minutes and serve. The onions really bring out the flavors of the dish.

1 pound ground chicken
1 T mayonnaise
1 T Dijon mustard
1 T Worcestershire sauce
1 t minced garlic (or 2 cloves minced)
1 t salt
½ t black pepper
4 T olive oil (separated)
