
I saw a recipe recently that looked good – Blueberry Oatmeal Bars. I love blueberries. I love oatmeal. They are both extremely healthy. Why not some bars for breakfast, dessert or snacks? I gave the recipe a shot and it’s a keeper.
Here’s how.
First, make the crust and crumble topping. Melt one stick of butter in the microwave. Add 1 C flour, 3/4 C Old Fashioned Oats (not quick oats), ½ C granulated sugar, ¼ C light brown sugar (packed) and a pinch of salt. Stir to combine but note that the mix will be a bit dry and lumpy. Set 1 C aside for the topping, line an 8×8 square pan with foil or parchment paper and press the balance of the mix with a spatula into the pan.
Now for the blueberry layer.
In a large mixing bowl, add 2 cups fresh blueberries, ⅓ cup granulated sugar, 2 tablespoons lemon juice and
2 teaspoons cornstarch. Distribute the blueberry mixture over the crust and then spread out the reserved crumble and press the topping mixture over and into the blueberries.
Bake in a 350 oven for about 45 minutes, or until crust turns a pale golden brown. Cool at least 30 minutes on a wire rack so the mixture will set. Refrigerate or leave on the counter and enjoy!

CRUST AND CRUMBLE TOPPING
½ C unsalted butter, melted
¾ C old-fashioned oats, (not quick cook or instant)
½ cup granulated sugar
¼ cup light brown sugar, packed
pinch salt
BLUEBERRY LAYER
2 cups fresh blueberries
⅓ cup granulated sugar
2 T lemon juice
2 t cornstarch
