
I really enjoy ground pork – not ground sausage, ground pork. I may even prefer it to pork chops because unlike chops, you really don’t have to worry about ground pork being dry or tough, and it’s not time sensitive with temperature. It is also absurdly inexpensive – under $5 a pound and zero waste.
I bought some this week and decided to experiment a bit. I decided to make some BBQ Ground Pork Patties, though you can use ground pork practically every place you would use ground beef.
I mixed 1 pound of ground pork, with 1/3 C Panko crumbs, 2 T mayonnaise, 1 t salt, 1 t black pepper, 1 T vinegar and 1 T Charlie Mills BBQ Seasoning. If you don’t have any Charlie Mills on hand (you really should), you can make your own with 1 t blk. pepper, ½ t cayenne, 1 t garlic powder, 1 t dry mustard, 1 T red pepper flakes, and 1 t salt. But back to my recipe. Mix all the ingredients thoroughly and refrigerate at least 1 hour to blend. Make 3 or 4 patties and sauté them in 1 T olive oil till just done inside. They are tangy and delightful. Put them on a bun and add more BBQ sauce if you wish but they are good just as they are – and make it a point to order some Charlie Mills Seasoning
BBQ Ground Pork (Carolina style)
1 pound ground pork
1/3 cup plain panko breadcrumbs
2 T mayonnaise
1 t kosher salt
1 t black pepper
1 T Charlie Mills Seasoning (or make your own)
1 T vinegar
1 T olive oil
