
(With Waffle Fries)
Take a good recipe and add bacon and it’s better. Even ice cream. Everything is better with bacon. That’s why when I saw a recipe for bacon, ranch and chicken tossed together in a casserole, I knew it would be good. You can’t screw up anything with bacon.
The recipe I saw also had Tater Tots, and I was going to use that except when I went to the store, the only Tater Tots they had was in a huge bag. I like Tater Tots, but not 10 pounds worth, so I looked for an alternative and saw a reasonably sized bag of waffle fries.
Perfecto!
This is a fairly easy recipe that starts with a rotisserie chicken. You can buy a nice size chicken at Sam’s or Costco for five bucks and it’s cooked. All you have to do is pull it apart and I did. Next, fry up ½ C onions in a little olive oil and set aside. Fry (I baked) about 9 strips bacon and set aside.
In a large bowl, put about 4 C shredded chicken, 1 can cream of chicken soup, 1 C sour cream, ½ C milk, 1 C shredded cheddar cheese, 1 T ranch dressing and seasoning mix, some black pepper, the onions and 6 of the strips of the bacon and mix thoroughly. In a 10×13 pan, spread a layer of the waffle fries on the bottom, add the blended chicken mix and spread out in the pan. Next, add a layer of waffle fries on top, crumble the last 3 slices of bacon and garnish with some chopped-up, fresh tomatoes. Bake 40 minutes at 350, then add another C of cheese and bake another 10 minutes. That’s it. It’s easy and it’s good.
Bacon, Chicken, Ranch Casserole
1t olive oil
½ C chopped onion
1 can cream of chicken soup
1C sour cream
½ C milk
2 C shredded cheddar cheese
1Tranch dressing & seasoning mix
¼ t t black pepper
¾ C shredded rotisserie chicken
1 bag frozen waffle fries
9 strips cooked bacon
½ C chopped tomatoes
