
Nothing hits the spot like a warm muffin and a cold glass of milk, particularly when fall arrives and ice clings to your windshield. Muffins are generally healthy; they taste great and they’re not all that hard to make.
One of my go-to recipes is this one for Apple Sauce Muffins. I made a batch this week. Yumm!
Heat the oven to 375 and spray a muffin tin with a little Pam. I then take a paper towel and thoroughly coat the insides of each tin. This keeps you from having to use a muffin tin liner (which I hate) and it allows easy removal by simply running a table knife around the edges.
Mix 2 C of flour, with ¾ C sugar, 2 t baking powder, 1 t cinnamon and ¼ t salt in a large bowl. In a separate bowl, mix 1 beaten egg with 1C unsweetened applesauce and a stick of melted butter. Mix the two bowls thoroughly, then fill each muffin tin to about 2/3 full. Bake for about 20 minutes (till a toothpick comes out cleanly).
Sprinkle to muffin tops with cinnamon sugar right out of the oven and dig in while they’re still warm.
Easy Applesauce Muffins
2 C flour
3⁄4 C sugar
2 t baking powder
1 t cinnamon
1⁄4 t salt
1 large egg, beaten
1 C unsweetened applesauce
1⁄2 C butter, melted
cinnamon Sugar for topping
