
I like making muffins as a breakfast side but recently decided to switch gears and make cupcakes instead. I made Apple Pie Cupcakes, to be exact and they were yummy – and “easy as pie” to make.
There are only 4 ingredients – a can of apple pie filling, three eggs, a box of yellow cake mix and a jar of cinnamon sugar (or blend your own).
Start by opening a can of apple pie filling, then chop the apples into about thirds. Whisk three eggs in a large bowl, add the pie filling and then mix in a box of yellow cake mix.
Prepare the muffin tins by squirting each cup with a shot of Canola spray, then take a paper towel and wipe around the insides of each cup. I do this so I don’t have to fool with paper cups, and my cupcakes or muffins always come out easily. Fill the muffin tins about 2/3 full. You will likely end up with enough for 16 or 18 cupcakes, so you will need more than one muffin tin.
Bake in a 350 oven for about 18 minutes or until the cupcakes are a golden brown and a toothpick comes out cleanly. Remove from the oven and immediately sprinkle lots of cinnamon sugar on top of each cupcake. Seve immediately with ice cream as a dessert or devour a couple each morning as a breakfast snack. Either way, they are delicious.

1 box yellow cake mix
3 eggs
2 T cinnamon sugar for the topping
