
I discovered Butter Lettuce at Kroger’s several months back. It’s not sold loose, like head lettuce, romaine, bibb and other lettuces. It usually comes pre-packaged, but I saw a pack not much more than a regular head of lettuce, so I bought it. It is sweet, rich, and delicious and, yes, buttery.
This spring as I was buying some young collard plants for my garden, I saw a six pack of small butter lettuce plants. I put them in the ground and one month later, I am reaping the rewards. I made a delicious Butter Salad with all the bells and whistles – olives, avocado, radishes, grapes, hard boiled eggs, and grated parmesan topped off with a Raspberry Vinaigrette Dressing.
I suggest two things: First, if you have a little garden space, plant some butter lettuce from seeds or plants, and second, next time you need lettuce for a salad, buy some butter lettuce.
Butter Lettuce Salad
1 head or package of butter lettuce
1 sliced avocado
18 red seedless grapes, halved
1 hard-boiled egg (split and crumbled)
1 dozen green olives
2 radishes thinly sliced
½ C grated Parmesan Cheese
Raspberry Vinaigrette Dressing
(or any other ingredients you can think of)
