Ever get into one of those “soupy” moods, where nothing but a big bowl of hot soup will do? Yeah, me too.
I was in one of those soupy stages recently and saw a recipe that drew my interest. It was for a 15-bean and smoked turkey wing soup. I haven’t cooked soup or beans with a smoked turkey wings in ages, so I headed to the only store in town where I absolutely knew I could find some smoked turkey wings – Food Lion. I bought a package and headed home to try my version of what I hoped would be a great soup. It turned out very well – rich and delicious and I certainly made a lot of it, so much so that I gave away two batches to friends and still had leftovers.
I suppose you could cut this recipe in half, but what the heck, make a big batch and give some away.
Start with a pound package of 15-mixed beans. The variety adds extra flavors and a bit of color. Soak the beans in a pot of water overnight. Drain and rinse the beans and add to a crockpot along with the smoked turkey wings, 2 diced carrots, a small, diced onion, a couple cloves of minced garlic, 1 can diced tomatoes, salt, pepper and 6 cups of chicken broth and 2 cups water. I kept my recipe simple, but you could add lots of extras, like chiles, oregano, bay leaves, cayenne pepper, etc.
Cook in the crock pot for 7 or 8 hours, remove the wings, pull the meat from the bones, add it back in and… soups on!
