If you rolled a wheelbarrow full of pistachio nuts up beside me and left me alone, I could eat the entire barrel full. Pistachio nuts are truly addictive. You put in a mountain of effort to eat just one. Sometimes they pop right out of the slightly open shell and sometimes you have to dig them out with a sharp molar. Sometimes, the shells are sealed shut and you need a hammer and chisel to dislodge the nut. But occasionally, you hit the nut lottery and find a lose pistachio nut out of its shell, waiting to be devoured. But overall, you have to work hard for each nut, put it in your mouth, taste its goodness, then it’s gone. You need another one, then another, and then soon, the wheelbarrow is empty.
My favorite pistachio nuts are salt and peppered seasoned. They are decadent, but I like them all. Green, tan, red – whatever color. I love pistachio nuts.
As a rule, things that you most enjoy eating are ultimately bad for you – like a well-marbled ribeye steak or a bucket of Bojangle’s Chicken and a Side of Biscuits. But pistachio nuts are not only tasty, they are practically a miracle health supplement.
Pistachios are nutrient-dense, low-calorie nuts packed with protein, fiber, and antioxidants that promote heart health, weight management, and improved blood sugar levels. They are rich in vitamin 𝐵6, potassium, and lutein. Pistachios support eye health, reduce oxidative stress, and aid digestion. That’s pretty impressive, but there’s even more. For heart health, they are cholesterol-free, contain healthy fats, and help lower blood pressure and cholesterol. To aid in weight management, the combination of protein, fiber, and healthy fats increases satiety, helping you feel full longer. With a low glycemic index, they do not cause large blood sugar spikes and may improve insulin resistance and assist with blood sugar regulation. They also promote eye, skin health, and gut health. And best of all, they are down and dirty delicious! Come to think of it, maybe one wheelbarrow full of pistachios isn’t enough?
