Country ham is one of those things you either like or you don’t – there’s no in between. My Daddy told me when I was growing up that there were three and only three things I didn’t have to eat – steak, avocados, and country ham. Everything else I had to eat, or I had to sit at the table until it evaporated – or I eventually ate it. I learned to eat lots of things that way, including country ham. My first impression was this was compacted salt that looked like meat of some sort. But when I later started mixing up bite-fulls of grits, fried eggs, biscuits, and country ham, I changed my mind. I dearly love country ham these days and they don’t make it too salty.
Recently, I have been getting my country ham fix at Kroger’s with a product called Clifty Farms Country Ham. I have been buying 6-oz. packages of country ham biscuit slices that run $4.59 each.
Clifty Farms is based out of Paris, TN, and ships to a number of stores throughout the southeast. Northerners wouldn’t appreciate ham like this so Clifty Farms doesn’t waste its time with stores north of the Mason Dixon line. Up there, they eat carp for breakfast – or worse.
In my opinion, there is only one way to cook these biscuit slices – fry them. Wet the bottom of a skillet with a bit of olive oil and cook the ham quickly, till it browns a bit. Red-eye gravy is optional, but biscuits are mandatory.
