One of the classic Seinfeld episodes was about muffin tops. Elaine suggested to a friend that somebody should sell muffin tops, not the whole muffins, because the tops were the best part. Her friend stole her idea, opened a muffin top store and Newman ended up eating thousands of leftover muffin bottoms. It was one of my favorite episodes.
Recently, I saw that Betty Crocker had a Muffin Top mix in several flavors. I tried a box. They are super easy to make and delicious. Muffin Tops are sort of like a soft cookie. They come in several flavors including Wild Blueberry, Chocolate Chip, Banana Chocolate Chip and Cinnamon.
The basic recipe for Blueberry calls for 1 egg, ½ C water, 3 T vegetable oil and a box of mix. Preheat oven to 400°F for dark or nonstick pan. Drain Blueberries from muffin mix; rinse and set aside. Stir muffin mix, water, oil, and egg in medium bowl just until blended (the batter will be lumpy). Gently stir in blueberries and drop the batter by rounded tablespoonfuls about 2 inches apart on an ungreased cookie sheet. I used parchment paper. It makes about a dozen tops. Try them, they’re good!
