I came across an interesting recipe for an appetizer. The kids of a family I cook for love anything Mexican, especially tacos and I figured they would enjoy Taco Roll Ups. They did. They are delicious and super easy.
You can actually make these with shredded chicken or beef, but I just went for the meatless recipe. Basically, you use floured tortillas, sour cream, whipped cream cheese, a package of taco seasoning, chopped green onions and chopped green pepper (optional)
Add one 12-oz. tub of whipped cream cheese spread (this is easier than working with. standard bars of cream cheese), 1 C sour cream, 1 package of taco seasoning, 3 finely chopped spring onions and a half of a green pepper (finely chopped) to a bowl, blend well and spread the mixture on a 10-inch tortilla. Roll tightly and put them in the freezer for about a half-hour, makingĀ them easier to cut and slice. Cut into 1-inch pieces, serve as appetizers on a big platter and watch them disappear.

1 12-oz. Carton of whipped cream cheese spread
1 C sour cream
3 green onions
Ā½ green pepper
