I like Tacos. I like Meatloaf. So how about a Taco Meatloaf? Bingo! It’s fun, it’s good, it’s tasty and easy.
Here’s how I made mine.
For starters, I have been using Ground Sirloin – a 90/10 blend – in my recent burger recipes. It has lots of flavor but not so much fat – barely enough to drain and in this case, no draining.
Put 2 pounds of the sirloin in a bowl and add 1 1/2 C crushed Fritos. Get the Fritos about the consistency of breadcrumbs to hold the stuff together. Next add 1 C shredded Pepper Jack Cheese, 1 C chopped onions (I use frozen, it’s easier) and a package of taco seasoning. Mix it as best you can. Whisk together 2 eggs, ½ C milk and 1/3 C taco sauce, then add that to the burger bowl. Squeeze it all together with your hands – it’s the only way – and shape it into a meat loaf pan. Add another 1/3 C taco sauce on top and pop it in a 350 oven for about 50 minutes – give or take.
A very tasty entree and a nice leftover sandwich the next day.

1/2 cup crushed tortilla chips
1 cup shredded pepper Jack cheese
1 C onion, chopped
1 package taco seasoning mix
2 eggs, beaten
½ cup milk
2/3 cup red taco sauce (divided)
