I saw a recipe for stuffed chicken breasts that looked good. The more ways and the more chicken you can eat, the better off you are heath-wise and weight-wise – at least I am. So I gave this recipe a try and it’s a keeper. Very simple – chicken, mozzarella cheese, pepperoni, and panko crumbs.
Begin with a large skinless and boneless breast section, then use a sharp knife and cut out a pocket within the breast, leaving three sides intact. In the pocket, put 3 or 4 slices of pepperoni, a ¼ C shredded mozzarella cheese and pinch the chicken shut. Rub the tops of the breasts with a little melted butter and sprinkle on Panko crumbs, plus salt and pepper. Bake in a 375 oven for about 25 to 30 minutes and enjoy – rich, tasty and healthy
Stuffed Chicken Breasts (for 2)
2 large skinless, boneless chicken breasts
½ C shredded mozzarella Cheese
6 or 8 slices of pepperoni (please, not turkey)
½ C panko crumbs
¼ stick butter
S & P to taste
