Nancy wanted some more oatmeal. She eats it often for breakfast, so I bought her a box when I went to the store. Except, I bought old fashioned oats – the original whole grain variety and she likes the oatmeal you can cook in a couple minutes. So, I went back and bought what she wanted, but now I was the proud owner of a box of Old-Fashioned Oats, and I eat eggs for breakfast.
I probably should eat more oatmeal. The old-fashioned kind sticks to your ribs and gets you through a morning without being hungry. It is a superb source of fiber, low in cholesterol and fat. It is sodium free and void of anything artificial. It is extremely healthy.
I decided to use my extremely healthy oats for Oatmeal Chocolate Chip Bars. A good choice – these babies are delicious. Here’s how.
First, buy the wrong kind of oatmeal and you’ll be forced to do something with it. Mix 2 cups of the wrong kind (old fashioned rolled oats) with 1 C milk chocolate chips 1/3 C packed brown sugar, 1 T regular sugar, 1 ½ t baking powder, ½ t salt and ½ t cinnamon in a bowl.
In a separate bowl, mix 1 cup milk, 2 large eggs, 2 tablespoons vegetable or canola oil and 1 teaspoon vanilla extract.
Combine the two bowls and set aside for about 30 minutes so the oats can absorb all the flavors. Pour the mixture into a well-greased 8-inch square pan and pop into a 350 oven for 35 minutes, or until the top turns golden brown. Let cool completely before cutting into 16 small bars. They are yummy to the max and pretty darned healthy.
