Longtime reader and subscriber of CvilleBuzz, Nancy Jackson of Urbana, says she came up with a concoction sure to please. It certainly pleased her husband Mike, so much so that he wanted it again within five days of his first sampling.
Nancy is like many cooks – she likes to experiment. Here’s what she came up with on a recent culinary adventure.
“I just cooked a ‘made-up’ recipe, as many of mine are, and I plan to do it again more often. It’s simple, easy and delicious.
Cook a pound of hamburger and drain. Add three tablespoons of Italian Seasoning, two teaspoons of red pepper flakes, one small can diced tomatoes (I used Rotel Mild), 1 can of white corn, 1 small onion, 1 cup beef broth and a small box of Tortellini pasta. Cook on low for 45 to 55 minutes. When ready to serve, add a cup of Pepper Jack cheese and cook until melted.
It is very filling and goes well with a crisp, Caesar Salad.
Nancy’s Tortellini Surprise
1 lb. hamburger cooked & drained
3 T Italian seasoning
2 t red pepper flakes
1 small can of diced tomatoes
1 small onion
1 small box of Tortellini noodles
1 C Pepper Jack Cheese
