Asparagus is good and good for you, but some find it boring. A couple weeks back, I printed an Asparagus/Green Pea recipe that many tried and enjoyed.
Yummly, a great on-line recipe source, offers this version.
Asparagus With Bacon & Mushrooms
1 tablespoon oil
5 bacon slices (chopped)
4 garlic cloves (peeled and crushed)
12 ounces mushrooms (sliced)
1 pound asparagus (sliced)
Salt & pepper
Quickly sauté the garlic in the bacon fat. Add the mushrooms and cook until tender. (Personally, I like Baby Portabellas instead of the standard white mushrooms.)
Add the asparagus and cover and cook until the asparagus is crisp-tender about 2-3 minutes depending on how thick your asparagus spears are. Season with salt and pepper (or soy sauce). Serve immediately.
