One of the best deals in the grocery section is one of those whole sides of a fresh salmon. It serves an army and there are usually leftovers. I have found a recipe that takes care of that problem. In fact, these salmon cakes might make you buy extra salmon on purpose.
I happen to like plain old salmon cakes made from canned salmon. These are better, and I think the French Onions make the difference. They make any dish better.
Here’s how.
In a large bowl, flake the left over, cooked salmon (about 1/2 pound) into small pieces and add ½ C crushed French Onions and 1/2 C mayonnaise. Stir with a fork to combine and add ¾ C crushed saltines, 2 t blackened seasoning plus S & P. Stir with a fork to combine. Let the mixture rest a bit in the refrigerator, then form small patties, and pan fry in a hot skillet for 3 or 4 minutes on each side. Serve with tartar sauce – a delightful and simple entrée!
Leftover Salmon (Cakes)
1/2 pound leftover cooked salmon
1/2 cup French onions
1/2 C mayonnaise
3/4 cup crushed saltines
2 teaspoons blackened seasoning
S & P to taste
1/2 cup olive oil for frying
Lemon wedges, for garnish
