I was trying for turkey chili, but it ended up more like a ground turkey soup – and it was good. After ballooning in weight from Christmas to New Years, I was going for something healthy. Ground turkey is healthy – very little fat and not enough calories to put weight on a spider. Sort of feeling my way through the process, I began by sautéing 2 stalks of chopped celery and about a half of chopped up onion in a pan with 2 T of butter and 1 T of olive oil. That’s a good start for most recipe. I added a T of minced garlic, then introduced a 20-oz. package of ground turkey to his friends. When the turkey looked done, I added 2 cans of cannellini beans, 1 t of chili powder, salt and pepper and a 32 Oz, carton of chicken broth – plus the secret ingredient – 1/2 C of (lite) sour cream. I covered the pot, and let it simmer for a while, then poured it in a soup bowl with a few crumbled Fritos. It was delicious, quite filling and I lost a little weight the next day – a good start to the New Year
Ground Turkey Soup
20 oz. pkg. ground turkey
2 T butter
1 T olive oil
2 stalks celery
½ large onion
1 T minced garlic
32 oz. carton chicken broth
2 cans cannellini beans
½ C sour cream
1 t chili powder
S & P to taste
