A recipe does not have to be fancy in order to be good. In fact, sometimes the simplest and easiest recipes are the best. Such is the case with chicken breasts.
Recently, my wife Nancy went to the store, as I was on my way home from a trip. We have been trying to eat healthy and therefore eat a lot of chicken, so she picked up some skinless chicken breasts, but she bought the thin cut, not the thicker version I generally buy. I think most people use the thin cuts for fajitas or in stir-fry dishes, but I wanted to do something on the grill.
I happened to have a new bottle of Kraft House Italian Dressing in the fridge, and it was “Lite”, so I used that and marinated the thin breasts for about a half hour. I fired up the gas grill, sprayed the grill with Pam, and dropped on the breasts. They cooked almost instantly, and without being overcooked, they turned out moist and tender. They were quite delicious.
In the future, I will remember the thin breasts when I need a chicken recipe. This was nothing fancy, but very good. Try it next time you’re pressed for time and want a quick, healthy entrée.
1 pound of thin-sliced chicken breasts
1 cup Kraft House Italian Light Dressing
Salt and pepper to taste
Cook the breasts on the grill about 3 minutes per side. Reserve some of the marinade. That’s it.
