Ground turkey is exceptionally healthy, and quite economical. A 4-ounce patty has less that 170 calories and a 20-ounce package of ground turkey runs less than $5. But we hardly ever have turkey patties. Face it. They are not very exciting entrees.
However!
By accident, I discovered a way to make turkey patties that are fit for kings. I had bought a 20-ounce package of ground turkey because I wanted a healthy meal that evening and was growing weary of chicken. My wife Nancy tolerates turkey patties. I like them, but wondered if I could make them more appealing. Rummaging through my cabinet, I came across a half can of those fried onions that you put on top of a green bean/mushroom soup casserole. I often put onions in turkey patties, they need a filler or some breading to make them adhere, and they also need a little oil.
Long story short, I crushed up two cups of the fried onions, added an egg, salt and pepper and made four of the best tasting turkey patties you’ve ever had. Next time you want a quick, economical and healthy meal, try this recipe. It’s good and it’s good for you.
20-ounce pack of ground turkey
2 C canned onion rings
1 egg
Salt and pepper to taste
1 T olive oil
1 T butter
Pour two cups of the canned onions in a Zip-loc and smash into fine pieces with the bottom of the measuring cup. Mix with the turkey, an egg, salt and pepper and from 4 to 6 patties. Sautee the patties in a fry pan with a tablespoon of butter and a tablespoon of olive oil. Cook on medium heat till brown and crispy on both sides and well done in the center.
