If I ever wrote a cookbook, it would be called “The Lazy Cook” because I am a great fan of easy recipes. Pumpkin muffins can be complicated to put together, but not my recipe. It’s about as easy as it gets, and the muffins are both healthy and delicious.
This recipe may appear to be too easy, and it is. I am, after all, a lazy cook.
You need five things: a box of yellow cake mix, a can of pumpkin puree, and a little cinnamon, cloves and nutmeg.
In a small bowl, add the contents from a can of pumpkin (like you’d use for pies) and the yellow cake mix. Stir thoroughly until all the cake mix is absorbed, then add 1 t of ground cinnamon, ½ t nutmeg and ¼ t ground cloves. That’s it. Mix well and pour the gooey stuff into a dozen greased muffin tins. Bake at 350 for about 30 minutes.
They are great for breakfast, as a snack or with a bowl of ice cream for dessert, and they sure are easy.

1 box yellow cake mix
1 15-oz. can Libby’s pumpkin puree
1 t ground cinnamon
1/2 t ground nutmeg
¼ t ground cloves
