I am convinced that if you only ate chicken as a meat source, you would waste away into nothing. Every time I eat chicken (but with no pasta, rice, or breads), I lose weight. Chicken is good, but you can easily tire of it. When you reach the point that you want to pull a couple eggs out of the refrigerator and sit on them, you know you’re eating too much chicken.
I recently came across a recipe, that will make you want to eat more chicken – not less. It’s called Crusted Chicken. When you see the ingredients, you’ll know why it’s so good. I do a little cooking for a busy family and recently prepared some Crusted Chicken, and the kids devoured it – begged for more.
Here’s how and it’s really easy.
The crusted part consists of crushed Cheez-its, French-fried onions (those in a can), and Italian breadcrumbs. With those ingredients, how can you go wrong? I bought 4 boneless chicken breast halves in a package and cut each into two parts. Brush a liberal amount of mayonnaise on and around each chicken part, then roll and press them in the finely crushed cheese and onion breading with some breadcrumbs and salt and pepper to taste. Place the chicken on a baking dish with parchment paper. Cook 20 minutes in a 450 oven, flip the chicken and cook another 15 minutes. The inside temperature should be 165. Now you’re ready for some absolutely, killer chicken. Plus, you’ll likely lose a little weight and maybe sit on a few more eggs.
Crusted Chicken
2 cups Cheez-Its, crushed
1 cup French-fried onions, crushed
½ cup Italian breadcrumbs
Salt and ground black pepper to taste
4 skinless, boneless chicken breast halves – cut in half
3 or 4 tablespoons mayonnaise
