Kroger’s sends me coupons about once a month. Usually, it’s for something like 50c off a dozen eggs, or $1.00 off if you buy 2 cheeses or maybe 50c off on three avocados. But often, they offer a free box of Betty Crocker Cake Mix for Special Customers. The Cake Mix is not really a big deal since it’s only about a buck-fifty for a box, but I usually take advantage and take a free box home.
This week, I looked in the cabinet and had 6 boxes of Betty Crocker Cake Mix and I really didn’t want a cake. To reduce my inventory, I decided to go with Chocolate Chip Cookie Bars, an interesting recipe I saw recently. It turned out well and now I’m down to 5 boxes of cake mix in my pantry.
This is a “Can’t go wrong” recipe because it has butter, sweetened condensed milk and chocolate chips. Anything you cook with those babies will be good. Here’s how.
Combine a box of white cake mix, with 2 eggs and 1/3 C of vegetable oil and mix well. Set aside 1/3 of the mixture and put the rest in the bottom of a well-greased 9 x 13 baking pan for the crust. Next, combine sweetened condensed milk, chocolate chips, and butter in a microwave-safe bowl. Melt in the microwave in 30 second intervals, stirring and checking for completion, about 2 minutes. Pour evenly over the crust. Drop teaspoonfuls of the reserved crust mixture on top.
Bake in a 350 oven for about 25 minutes, allow the mix to cool and cut into bars. Good stuff.
Chocolate Chip Cookie Bars
1 (18.25 ounce) package white cake mix
2 large eggs
⅓ cup vegetable oil
1 (14 ounce) can sweetened condensed milk
1 cup semisweet chocolate chips
¼ cup butter
