I cook for kids on occasion. Sometimes they are picky and sometimes they are not. One of the times they are not picky at all is when I fix a batch of burritos. Nothing fancy, just burritos. Recently, for a change of pace, rather than beef burritos with ground meat, I made some chicken burritos. I used chicken thighs and they were delicious.
Chicken thighs, skin-on, bone in, are among the best buys in the grocery store. Often, you can buy thighs at 79 cents a pound, sometimes less. And there is lots of meat on a thigh so you really get your money’s worth. Thighs also, without question, are the tastiest parts of the chicken. For these burritos, I bought two packs of thighs with 6 thighs each.
I began my recipe by baking the thighs with the skin and bones intact in a 350 oven. I seasoned with a little salt and pepper and a dash of Sauer’s Chicken Rub.
They cooked in an hour and I let them cool before peeling off the skin and pulling the meat from the bone, as I would for pulled pork.
The rest was standard as far as burritos go. I used a couple packs of Taco Seasoning and added a large jar of chunky salsa. That’s it.
To prepare the burritos, I put 10-inch flour tortillas, one at a time, in the microwave for 8 seconds each. Next, I added the chicken mixture and folded the tortillas, first the bottom up, then the sides wrapping over the top. After I had folded about a dozen burritos, I placed them folded side down on a cookie tin and into a 350 oven for about 10 minutes until they set.
I served them with guacamole, taco sauce, shredded cheddar and sour cream. The few leftovers were relished in lunch boxes the next day.
Next time you have some kids (or hungry adults) you’d like to see leave the table full and happy, fix up a batch of chicken thigh burritos. They are really easy and really yummy.
Chicken Thigh Burritos
12 chicken thighs
2 packs Old El Paso Taco Seasoning
1 jar Chunky Salsa
12 10-inch flour tortillas
Salt and pepper
Season and bake thighs for one hour in 350 oven. When cool, remove skin and pull meat from the bone. In a saucepan, add chicken, taco seasoning and salsa. Cook five minutes; add chicken mixture to tortillas and bake at 350 for 10 minutes.
