Chicken makes a diet-friendly entrée – except when you deep fry it with skin on and serve with mashed potatoes, rolls and gravy. That’s my favorite way to eat chicken, but a sure-fire weight gain. Therefore, I am always on the lookout for a chicken dish that’s not as dull as a doorknob, but a little healthier and one that tastes good. I recently saw a recipe for chicken and avocado patties. I like ground chicken and I like avocadoes. How bad could it be? It turned out very well and I intend to add it to my list of chicken possibilities.
The recipe starts with ground chicken, an excellent and healthy buy in the meat department. Ground turkey is easy to find, but some stores don’t offer ground chicken. I bought mine at Kroger’s.
Add 1 egg and about 1/3 C Panko crumbs to a package of ground chicken. Once blended, I then added 1 avocado which had been chopped into lima bean sized pieces. I also added Kosher salt, coarse black pepper and a dash of garlic powder. When thoroughly mixed, I formed 4 patties and put in a hot skillet with 1 T olive oil and 2 T butter. Brown quickly on both sides then finish in a 350 oven – about 10 minutes. Finishing in the oven keeps them a bit moister, though you could finish in the skillet and save a step. Pour the skillet drippings over the patties and enjoy a tasty, healthy meal.
Chicken Avocado Patties
1 pound ground chicken
1 avocado (large ripe, cut into chunks)
1/3 C Panko crumbs
S & P to taste
Dash of garlic powder
1 T olive oil
2 T butter
