I was going back through some past CvilleBuzz issues and saw this recipe for Cabbage Steaks. Nancy Jackson, premiere Realtor in Saluda and Master Chef, had sent me the recipe as a means to use the extra part of a cabbage head you may have left over from a batch of cole slaw. I had totally forgotten about it but went out immediately and bought a fresh head for exactly this recipe. It’s a wonderful and delicious substitute for baked potatoes and with a fraction of the calories, and it’s just damned good.
Here’s how Nancy says to do it:
Take a head of cabbage and cut it crosswise into half-inch “steaks”. Sprinkle olive oil on top, add a dash of garlic powder, some cracked pepper and sea salt and place them on a cookie sheet.
Bake at 400 degrees for about 20 to 25 minutes. Nancy says to wait until the outer edges begin to crispen. Remove from sheet with a spatula and enjoy.
It is indeed delicious. Try some cabbage steaks soon.

1 head of cabbage sliced crosswise into steaks
Olive oil
Garlic powder
Cracked pepper
Sea salt
