Tossed salad, cole slaw, tossed salad, cole slaw. I’ve been in a rut when it comes to fresh, green salads to serve along with a meal. Just recently, I ran across a recipe for a Broccoli/Apple salad that sounded good, so I tried it. It was especially good, not that difficult to put together and figures to become a new member in the salad rotation.
Here’s how.
For starters, I used a bag of fresh, shredded broccoli from Kroger’s. I suppose you could put a couple broccoli crowns in a food processor, but this was much easier. Along with the bag of broccoli, add 3 Granny Smith apples, peeled and cut into bite size pieces, a small bag of walnut pieces, a half cup of cranberries and three or four tablespoons of Raspberry vinaigrette salad dressing. Toss thoroughly, chill before serving and enjoy! And I really think you will.
Broccoli/Apple Salad
1 pkg. fresh, shredded broccoli
3 Granny Smith apples
1 small bag chopped walnuts,
½ C. cranberries
4 T Raspberry Vinaigrette salad dressing
