I felt creative a few weeks back. I also needed some color to add to my Chicken Stuffed with Cream Cheeses entrée. Why not bake some tomato slices, I thought? And I did.
I decide to slice the smallish tomatoes and place them on a little round piece of wrap bread. It was the sun-dried basil version by Mission Wraps. I cut a circle with a biscuit cutter to match the size of the tomato. I spread a little Lemon Dill Aioli on the bread, added the tomato slice with some salt, pepper and Parmesan cheese. On top, I sprinkled some crushed, dried fried onions (out of a can) and baked the slices on a sheet in a 400 oven for about 10 minutes. I have received rave reviews from my guests. Some said it was the best part of the meal.
Tomato season is on the way. Try this recipe for an interesting and delicious ways to put a little color on the table and tasty vegetables in your mouth.
