I do a little cooking for a family with three young kids. They are always on the go and they enjoy finger food – especially sweets – cookies and the like.
Recently I saw a recipe called Apple Cups that looked interesting and I tried it. It was delicious, the kids loved it and it was amazingly easy to put together. You might consider a batch of Apple Cups for a picnic or event this summer. They are also good for breakfast.
Here’s how,
Buy a can or two of Pillsbury Cinnamon Rolls. They’re in the biscuit section of the grocery store and they are pretty good just like they are. But when you add apple pie filling, they are really good.
Simply pop open an eight-pack of the cinnamon rolls and press each roll in the bottom and along the sides of a muffin cup. I found that the job went easier by spraying a little Pam on a cutting board, then pressing the rolls out nice and flat and they didn’t stick. Inside each muffin cup, add enough apple pie filling to fill the cups, bake in a 375 oven for 15 to 20 minutes. You can serve the cups hot or cold, by the way.
I’d like to say this is a complicated recipe, but it’s not. It has two ingredients, it’s easy and it really makes a delightful dessert.
