When we arrived in Nags Head last week, one of my first trips was to Food Lion and the meat department. I was looking for my favorite sausage – Spencer’s – and they had some. Nancy and I ate it every day for breakfast and brought home an extra package.
Spencer’s Sausage is made and processed in Eastern NC, in Washington, over near Greenville and East Carolina University. They make sausage the old fashioned way – whole hog, spicy, no preservatives and delicious. They make it in ground-form for patties and they also stuff it in a long roll of casings – my favorite.
When I was young, I remember my Aunt Topsy buying sausage like this and bringing it to family gatherings. At first, I didn’t like it – way too spicy, then I began eating it little by little and now it is among my favorite foods.
Spencer’s is a family business, founded in Columbia, NC in the late 1920’s. It remains a family-run business, and you can tell. This is a high quality product – the best sausage there is, outstanding flavor and very little fat.
If you find yourself in Eastern, NC (you can’t buy it here) and you love sausage, make it a point to visit a few grocery stores and if you find some Spencer’s Sausage, buy several packages and bring them home.
