Sounds sorta’ goofy, doesn’t it? But let me tell you something. Peanut Butter Pie is unbelievably good. The recipe is in a cookbook Nancy gave me for Christmas – “The Happy in a Hurry Cookbook” by Steve and Kathy Doocy. Steve is the longtime morning host of Fox & Friends. He is a laid back, family kind-of-guy who happens to love to cook. Nancy saw him prepare a few of his recipes, live on Fox and thought I would enjoy the book. And I do.
Steve is my kind of cook. If it isn’t easy and if it takes a long time, he doesn’t do it. His recipes use ordinary stuff you might have in the kitchen, not some sort of sun-dried Lebanese kumquats, or such. I have already used several of his concoctions with great success – and the book is a fun read. Each recipe comes with a story, like the time he was a young reporter and met President Reagan and suggested that he and Nancy come to dinner at his house – without telling his wife Kathy, and Reagan thought about it.
It is a great book. Buy it.
But to tempt you with the Peanut Butter Pie recipe, let me just say that it begins with a crust of butter and crushed Ritz crackers, then gets better after that. It is really good. Order the book.
