Sure, a stack of pancakes sounds nice. Maybe even a couple dozen for a brunch. But sometimes you don’t want half of IHOP’s inventory. Sometimes you might want just a couple of pancakes. Maybe even just one instead of toast. As best I know, there is no recipe on the back of a pancake box for one flap jack. But there is a way to make just 1 or 2 or 3 pancakes – or however many you feel like. Simply mix up a batch of Ice Cube Tray Pancakes.
I saw this interesting idea on one of my cooking websites. The idea is to make an entire batch of pancakes but pour the batter in some ice cube trays. Freeze them and they are ready when you are – even just one pancake.
And there is no thawing. Cook the ice cube pancake as is.
Use whatever pancake recipe you wish – even with chocolate chips or blueberries – pour the batter in the trays and cover the trays. When you’re ready for pancakes, pop however many you need out of the tray onto a well-greased skillet over medium heat. Then cover the skillet with a lid – that’s vital in order to trap the heat. Cook for 1 to 2 minutes a side and serve. The square shaped trays work best and produce silver dollar sized pancakes, but round trays work as well.
