I had bought a ten-pack of huge 10-inch tortillas and only used 4 in a Fajita bake.
So now what do I do with the 6 leftover tortillas the size of an old LP? Naturally, I decided to experiment.
I bought a tub of spreadable cream cheese and a couple deli packs of thin honey ham.
After letting the cream cheese come to room temperature, I spread it evenly over the tortilla, then spread 5 slices of the ham so that they covered the cream cheese. Next, I rolled the tortillas and contents into tight rolls and cut them in half.
But the piece de resistance came with a jar of mustard I had located. Called Herlocher’s Dipping Mustard, I saw it in the deli department in Kroger’s and it called out my name. This stuff is so good you could dip a cow pie in it and it would taste good, but those ham and cream cheese roll ups were perfect with the mustard.
Herlocker is a Pennsylvania company. Charles Herlocker developed the Dipping Mustard from an old family recipe and it is sensational – a blend of sweet and tart and yummy. It transforms an ordinary sandwich into a fine chef’s creation – also good on Chinese and Asian foods.
I don’t know if other stores sell it, but if you see a jar – buy it. And next time you have a family of big tortillas laying around, roll ‘em up
