If you don’t want to go out to eat, you can always do a take-out from your favorite restaurant. Or you can cook and make a dish exactly like they do at your favorite restaurant, and save money and travel time.
I like Outback Chicken – cooked on “The Barbie”.
It has a little kick, spicy but not overly so. It’s good on a sandwich, pasta, in a salad or just by itself.
I had a hankering for some Outback Chicken last week, and went on-line for a copy-cat recipe for their special seasoning. I found one, duplicated it and the product turned out very well.
It’s a dry rub. Here is the recipe I used.
1/4 teaspoon poultry seasoning
1/8 teaspoon cayenne pepper, to taste
1/8 teaspoon white pepper
1/8 teaspoon onion powder
1 tablespoon garlic powder, to taste
Apply the rub at least an hour before cooking. I used chicken breasts sliced in half and cooked them on “The Barbie”. I sprayed olive oil cooking spray directly on the chicken before cooking and they didn’t stick to the grill.
Don’t overcook – just a few minutes on each side. If you like Outback Chicken, try this rub recipe. It’s spot on.
