Occasionally, our next-door neighbors, a young couple, will allow us to babysit for them. Their three year old son, Liam, is a joy to be around, and since our children, the inconsiderate trolls, have moved far away, Nancy and I need a little grand parenting activity every now and then to shake off the rust. So after work last Wednesday, we went to their house to babysit and decided to order out while we were there.
Vocelli’s, our go-to pizzeria, is just up the street, so we order from them frequently. Usually, it’s a large, thin crust pizza, but occasionally we order their Italian Subs. They are delicious, reasonably priced and they are not terribly fattening. So we went with the subs, but I thought maybe if we ordered a side, Liam would join us, even though he had already eaten his dinner. I didn’t think he’d go for their hot wings, so I ordered some chicken tenders, thinking they would be the typical, pre-frozen pieces of breast meat like most fast food stores serve.
I was wrong. These were the best chicken tenders I have ever put in my mouth. They were falling apart tender, perfectly breaded and baked and came in a generous portion. We had five large tenders for just $5.99. And yes, Liam joined us and ate his share.
We enjoyed the tenders so much, we now make these delightful appetizers as the main course on some order-out nights, and fix or order a salad to go with them
